Ingredients
- 5 onions
- 50g butter
- Sprig of thyme
- 1 tbsp flour
- 300ml cider
- 500ml beef stock
- 4-6 slices of ciabatta
- 100g Gruyere, grated
Directions
- Set the oven to 200 celsius.
- Finely slice the onions and toss with the butter. Season and place in an ovenproof pan covered with tin foil.
- After an hour, take off the cover and roast for another hour.
- Remove from the oven and place on a high heat on the stovetop.
- Sprinkle in the flour and thyme leaves and mix into the onions. After a minute or so, pour in the cider, and deglaze the pan.
- Pour in the stock, and simmer for 30 minutes on low.
- To serve, place in bowls and top with pre-toasted bread slices covered in cheese. Then place under a hot grill till brown.
Serves 2 as a main or three as a starter.
