French onion soup

Ingredients

  • 5 onions
  • 50g butter
  • Sprig of thyme
  • 1 tbsp flour
  • 300ml cider
  • 500ml beef stock
  • 4-6 slices of ciabatta
  • 100g Gruyere, grated

Directions

  • Set the oven to 200 celsius.
  • Finely slice the onions and toss with the butter. Season and place in an ovenproof pan covered with tin foil.
  • After an hour, take off the cover and roast for another hour.
  • Remove from the oven and place on a high heat on the stovetop.
  • Sprinkle in the flour and thyme leaves and mix into the onions. After a minute or so, pour in the cider, and deglaze the pan.
  • Pour in the stock, and simmer for 30 minutes on low.
  • To serve, place in bowls and top with pre-toasted bread slices covered in cheese. Then place under a hot grill till brown.

Serves 2 as a main or three as a starter.
