Saag Paneer (BIC style)

Ingredients

  • oil for frying paneer
  • 250g paneer (one packet)
  • 1 portion of BIC gravy (see recipe)
  • 1 tbsp ghee
  • 400g spinach
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander seeds
  • 1 tbsp ground cinnamon
  • 100ml cream
  • 1 tbsp kasuri methi (dried fenugreek leaves)
  • 1 lemon

Directions

  • Brown the paneer in oil, then set aside
  • Wilt the spinach in a pan with a the ghee
  • Add the BIC gravy and spices and cook for 10 minutes
  • Add cream and then blend until smooth
  • Mix in paneer, kasuri methi, and juice of half a lemon then serve
