Notes
BIC refers to British Indian Cuisine, which is a style of Indian food that has been adapted to suit British tastes. It is often characterized by the use of cream, butter, and ghee, as well as a milder spice level than traditional Indian cuisine. This recipe is designed to be closer to the BIC style, with a creamy sauce and a milder spice level, while still being vegetarian.
