Siphon hollandaise

Ingredients

  • 40g shallots or red onion
  • 25g white wine vinagar
  • 150g butter
  • 85g egg yolk
  • 20g lemon juice
  • 20g vinegar reduction
  • salt 3g

Directions

  • In a small saucepan, reduce shallots and vinagar by half
  • Combine all ingredients in a bag, and sous vide at 65 celcius for 30 mins
  • Place in 500ml siphon and charge with 2 cartidges
  • Warm (or keep warm) at 60 celcius in water bath
  • Siphon for yum
