Siphon hollandaise

Ingredients
- 40g shallots or red onion
- 25g white wine vinagar
- 150g butter
- 85g egg yolk
- 20g lemon juice
- 20g vinegar reduction
- salt 3g
Directions
- In a small saucepan, reduce shallots and vinagar by half
- Combine all ingredients in a bag, and sous vide at 65 celcius for 30 mins
- Place in 500ml siphon and charge with 2 cartidges
- Warm (or keep warm) at 60 celcius in water bath
- Siphon for yum
