Sugared nuts, blue cheese and pear salad

Ingredients

  • 3 rinsed pears, in wedges
  • Thumb thick slice of butter
  • 200g greens (peppery leaves work well)
  • 1/2 cup blue cheese
  • Lemon juice
  • 4 tbsp olive oil
  • 1/2 tsp honey
  • 1 tbsp balsamic vinegar
  • 1/2 cup walnuts blanched in salty water
  • 1/2 cup powdered sugar
  • Oil for frying

Directions

  • Splash the cut pears with lemon juice to prevent them browning.
  • Make the glass nuts.
  • While the nuts cool - fry the pears on a medium heat till browned. Season well.
  • Whisk together the olive oil, balsamic vinegar and honey to make a vinaigrette (season well).
  • Season the vinaigrette, remembering to underseason if the cheese is salty.
  • Plate the ingredients!

The other pear salad was healthy-ish and easy, this salad is it’s decedent brother. The glass nuts are really good - so worth the effort.
