Sugared nuts, blue cheese and pear salad

Ingredients
- 3 rinsed pears, in wedges
- Thumb thick slice of butter
- 200g greens (peppery leaves work well)
- 1/2 cup blue cheese
- Lemon juice
- 4 tbsp olive oil
- 1/2 tsp honey
- 1 tbsp balsamic vinegar
- 1/2 cup walnuts blanched in salty water
- 1/2 cup powdered sugar
- Oil for frying
Directions
- Splash the cut pears with lemon juice to prevent them browning.
- Make the glass nuts.
- While the nuts cool - fry the pears on a medium heat till browned. Season well.
- Whisk together the olive oil, balsamic vinegar and honey to make a vinaigrette (season well).
- Season the vinaigrette, remembering to underseason if the cheese is salty.
- Plate the ingredients!
The other pear salad was healthy-ish and easy, this salad is it’s decedent brother. The glass nuts are really good - so worth the effort.
